Pork is often associated with Eastern Europe and Germany. In the Baltics, these influences have been strong historically, so pork is commonly eaten at home. It is seen as an everyday meat, whereas game might feature on restaurant menus and is considered to be more for special occasions. Because I don’t eat pork very often myself, when I do I like to jazz it up a little, such as with this tangy sea buckthorn sauce; if you can’t get hold of sea buckthorn, you could use cranberries instead.
