This recipe arose from a fish pie made by the lovely Madara, who owns Unce Eko organic food shop in Riga, and she in turn was inspired by a traditional fish pie from the Kurzeme region of Latvia, where her mother lives. However, when I tried to recreate it in my kitchen at home, it was impossible: for a start, there were no sprats around at that time of year ... Madara suggested using anchovies instead, so I ran with the idea and transformed the dish
