This sweet, earthy slaw is a firm favourite of mine — I often stuff it into warm pitta bread for lunch.
Toast the walnuts and pumpkin seeds in a dry frying pan over a medium heat for a few minutes, until lightly browned and the pumpkin seeds are starting to pop. Tip into a large bowl and allow to cool, then add the celeriac, raisins and parsley.
For the dressing, mix the soured cream with the mayonnaise and season very well with salt and pepper.
