Curly, fermented garlic scapes are something I ate for the first time on our Baltic adventure and, for me, it was love at first bite. They are wonderful on their own (the younger, thinner ones are tastiest), piled onto buttered rye bread or added to dishes — try them with the millet ‘risotto’.
