I was going to call these quick-pickled gherkins, but they’re not actually pickled, just a bit beaten-up!

You will find recipes for gherkins in brine in many an Eastern European cookbook (including my own Polish one), so I wanted to provide a quicker, easier option here, especially since I ate cucumbers like this so many times on my travels in Estonia over the summer months, and loved their freshness.
