Kvass comes in as many hues as amber: it can be cloudy or clear, malty and dark like cola, or so light and zingy that it resembles lemon sherbet. The recipe is inspired by a waitress at a Riga restaurant who gave us some of her home-made kvass, even though it wasn’t on the menu.
