The ‘quince’ grown in the Baltic States is actually chaenomeles fruit, also known as Japanese quince. Sadly this hard, sour fruit is not easy to find in shops but I happen to have some growing in my garden, so I decided to include this Baltic-style bellini, in case you do too (or you could use crab apples instead).
