Courgettes are known by their Italian name, zucchini, in the States. Hot sunny summers produce an abundance of zucchini so they are used in breads and cakes. This bread is moist and well flavoured and makes a nice tea bread, toasted with butter and jam.


  • 500 g (1 lb) small firm courgettes
  • 1 teaspoon salt


Peel and grate the courgettes. Toss them with the salt and leave them for 15 minutes.

Preheat the oven. Grease a 23 cm (9-inch) square tin and line it with greased greaseproof paper. Combine the su
