In the late Autumn when cranberries appear in the shops, freeze a few packages to enjoy in the new year. Their tart flavour and attractive bright red colour enhance many dishes. This is a lovely tea bread, beautiful to look at and perfect with jam. It is also good toasted.

Ingredients

  • 250 g (8 oz) plain flour
  • 1 tablespoon baking powder

Method

Preheat the oven. Grease and line a 23 X 11 X 6 cm (9 X 4½ X 2½-inch) loaf tin (or any other 1 kg (
