Strata has replaced quiche on menus in New England inns. A Strata is the perfect solution fora light supper or luncheon dish, and is great for the hostess because she can prepare it ahead of time and only needs to slide it into a hot oven before serving. It is somewhere between a soufflé and a rarebit, and absolutely tasty and delicious. Serve it in slices: it is wonderfully creamy but will hold its shape perfectly.
