Barley was brought to the States by the early settlers who used the seed for cereal, breads and casseroles such as this one. Today America is the second largest barley producer in the world. This barley bake is nutritious and delicious as well. It makes a good main course served with some grated cheese, or try it in place of rice when you next have chicken or game.
