Chicken breasts are coated with breadcrumbs and parmesan cheese and baked with a lime garlic butter. It is simple and practical; the results are succulent and are especially good served with broccoli.
Preheat the oven. Trim off any fat from the chicken breasts, pat them dry and season them with salt and pepper. Mix the breadcrumbs, cheese, parsley and lime zest with some salt and pepper. Dip the chicken pieces in the melted butter and then roll them in the breadcrumb mixture.
