Election Day Cake

Well over a century ago, election days provided a focus for a get-together. Voters often travelled considerable distances to cast their ballot and took this opportunity to catch up on local news over food and drink; this yeast cake held a place of honour on the buffet tables. It is rich but light, with an excellent flavour of mace and rum, and heavenly with coffee.
