I feel very nostalgic about this cake. It was my favourite at what must have been one of the original hamburger restaurants in New York City: Hamburger Heaven. It has two scrumptious light cake layers frosted with a creamy caramel icing. See for a note on vanilla sugar.


For the cake

  • 250 g (8 oz) self-raising flour
  • a pinch of salt


Preheat the oven. Grease and line two 20 cm (8-inch) sandwich tins with baking parchment. Sift the flour with the salt three times and set it aside. Cream the butter and sugar until they are soft and light
