‘Sugar and spice and all things nice’ describes this wonderfully light layer cake from the South. It is one of my favourites and is particularly good with the ginger frosting. See for a note on vanilla sugar.


For the cake

  • 315 g (10½ oz) plain flour
  • 3 teaspoons baking powder


Preheat the oven and line three 23 cm (9-inch) cake tins with buttered greaseproof paper.

Sift together the flour, baking powder, spices and salt. Cream the butter until it is light and fluffy, add
