The tradition of fabulous baked puddings continues into the present. Here is a truly superb tart that comes from the duo pianists Fizdale and Gold. These versatile musicians are also inspired cooks and are responsible for this perfect pie. A thin, crisp pastry case holds a pear purée and wine-poached pears, their red edges beautifully displayed in overlapping slices.
