Crunchy muesli cereals, so popular now, make healthy and very scrumptious cookies. Peanut butter, raisins and nuts are added to these, which are just the thing for a nourishing snack or to include in childrens’ lunch boxes.


  • 125 g (4 oz) soft margarine, plus extra for greasing

Preheat the oven. Cream the margarine and sugar together and then mix in the peanut butter. Gradually stir in the egg. Sift the flour, cinnamon and salt over the mixture and stir them in and then add the cereal, raisins and nuts. Taste the mixture to see if needs more sugar or cinnamon, as mueslis vary in sweetness and flavouring. Spoon the mixture on to a greased baking sheet, spreading each s
