Pecan trees are native to an area stretching from Illinois to Mexico. The ever-enterprising Thomas Jefferson introduced them to Virginia and gave some to George Washington to plant at Mount Vernon. Pecans are irresistibly good in this cookie. See for a note on vanilla sugar.

Ingredients

  • 125 g (4 oz) butter
  • 1 teaspoon vanilla essence, if available

Method

Preheat the oven. Cream the butter and then stir in the vanilla essence. Grind the nuts with the sugar in a blender or food processor or chop them by hand. Stir them into the butter, with the flour, to form a dough. Roll the dough into large marble-sized balls between the palms of your hands. Place them on a greased baking sheet and
