Oat flakes added to meringues result in a delicious flavour and chewy texture. Use this idea for any meringue recipe. It is very good baked in a large round and served covered with fruit and cream.
Preheat the oven. Grease and flour a baking sheet. Whisk the egg whites with the pinch of salt until they start to form soft peaks. Sift the cornflour over the top and whisk it in until the whites form stiff peaks. Whisk in half the sugar until the mixture is glossy and stiff. Fold in the remaining sugar and then the oat flakes.
