Jackie swoons for cardamom the way a cat swoons for catnip. When Jackie and Brian got married, Brian made white chocolate cardamom truffles enrobed in Oreo crumbs as take-away gifts. Ten years later, Jackie begged and pleaded for cardamom to be featured as one of Ample Hills’ first twenty-four flavors. But Brian couldn’t be persuaded. Not popular enough, he said. But wouldn’t you think an ice cream–making husband would want to please his wife and make a cardamom flavor? Popularity be damned! A year later, in an effort to regain some marital harmony, Brian created Cardamom Bliss. Jackie tasted it and forgave him, and so far they have lived happily ever after.

  • ½ teaspoon freshly ground cardamom
  • 7 ounces (200 g) white chocolate, chopped


  1. Prepare Walt’s Dream according to the recipe directions, adding the cardamom prior to heating the base. Once the base reaches 165°F (75°C), remove the pan from the heat and add the white chocolate. Stir until the white chocolate melts. Transfer the pan to the ice bath and let cool for 15 to 20 minutes. Pour the ice cream base through a wire-mesh strainer into a storage container and place in the refrigerator for 1 to 2 hours, or until completely cool.
  2. Transfer the cooled base to an ice cream maker and churn it according to the manufacturer’s instructions.
  3. Transfer the ice cream to a storage container. Serve immediately or harden in your freezer for 8 to 12 hours for a more scoopable ice cream.
