This is one of the many recipes for pasta with tuna. It is called ‘in bianco’, meaning ‘white’, because it doesn’t contain tomatoes. It was created by my daughter and I was so impressed that I had to pass it on, hoping you will like it. It is ideal to dress a bowl of gomiti or fusilli.
Cook the pasta in boiling salted water.
While the pasta is cooking, heat half the oil in a large frying pan and, when hot, add the garlic, half the parsley, the capers and lemon rind. Cook for a minute or two and then stir in the tuna, salt and pepper. Cook for a further 2 minutes, breaking up the tuna as much as you can with a fork.
