Tajarin are the homemade tagliatelle of Piedmont. Here they are dressed in the best possible way, with butter, Parmesan and white truffle. I have not stated the quantity of white truffle you need, because it is a question of how much you want to spend. At the time of writing, white truffles cost about 150–200 euros per 100 grams. 25 grams are enough, but it is certainly not a cheap supper.

White truffles should not be cooked, while black truffles need a few minutes cooking
