  • 2 raw or cooked cotechino sausages, about 250g each
  • 6 tbsp olive oil

Method

Put the cotechino sausages into a saucepan and cover with cold water. Bring to the boil, then lower the heat and simmer, allowing 3 hours if raw, 20 minutes if pre-cooked. Drain and cool slightly.

Heat 4 tbsp of the olive oil in a large sauté pan with the garlic. Add the ceps and sauté until softened and the juices have evaporated. Remove from the heat and mix in the herbs. Leave to coo
