Method

This full-flavoured tomato sorbet makes an ideal appetiser on a hot summer’s day. I like to serve it with fresh tuna carpaccio or prawns in a spicy, cocktail-style sauce, or just on its own. Make sure the tomatoes you buy are perfectly ripe.
