A sexy potato salad with colours to set the tastebuds dancing in anticipation. Purple truffle potatoes (sometimes sold as black potatoes) are becoming increasingly available now but any variety of firm, waxy potato could be used instead.

Steam or boll the potatoes in their skins until just tender, about 15-20 minutes. Drain well and leave until cool enough to handle. Meanwhile, warm the
