This recipe uses mirin, a Japanese sweet rice wine that is usually added to sauces or marinades for meats and strong-tasting fish such as tuna. Shiitake mushrooms, with their distinctive meaty flavour, make a wonderful vegetarian alternative, easy to prepare and great served with oriental noodles.
You will need 4 bamboo skewers for this recipe, soaked in cold water for 30 minutes-1 hour
