Method

This is one of the great mash recipes, with all the flavour of the Southwest bursting out. Poblano chillies are one of the most commonly used varieties in Mexican cooking. Roasting the chilli intensifies the smoky flavour that makes this dish so special. If you cannot find a poblano, use a large red serrano chilli instead.
