Method

This simple but delicious way of cooking chestnuts with celeriac was first shown to me by my friend and mentor Anton Mosimann during our time together at The Dorchester in London. I now regularly cook chestnuts like this at home over Christmas.

Heat the butter in a pan, add the chestnuts and sugar and cook for 8-10 minutes, until the chestnuts are lightly caramelised.
