  • 1 small hot red chilli
  • 500 g (1 lb 2 oz)

Method

This is a very good example of the way in which vegetables can give a special flavour to desserts: I love this recipe because it adds a touch of unexpected spice.

Cut the chilli in half lengthways, remove the seeds and dice very finely. Place in a pan with the sugar and water, bring to the boil and simmer for 1-1½ minutes or until the sugar has completely dissolved. Remove from the heat
