A classic Italian-style bruschetta calls for grilled bread slices rubbed with garlic, drizzled with extra-virgin olive oil, sprinkled with salt, and topped with diced summer tomatoes and basil. Adding a thin slice of ricotta salata or mozzarella cheese turns this starter into heartier fare.

Method

Preheat the broiler (grill). Alternatively, preheat a charcoal or gas grill for direct grilling over medium-high heat, and oil the grill rack.
