This popular Italian flatbread is made in many regions of the country and prepared with different toppings, from grapes to tomato to walnuts and anchovies. Serve this simple version, topped with sea salt and herbs, with a flavored oil and vinegar dipping sauce.

Method

In a small bowl, sprinkle the yeast over the warm water and let stand until creamy, about 5 minutes. Stir until dissolved. Add the milk and 4 Tbsp (2 fl oz/60 ml) of the olive oil and stir to combine.
