A tostada is one of those things that we take for granted. There are so many great packaged ones out there, but that moment when you bite into a super flaky homemade tostada will immediately make you think: Why didn’t I fry my own tortillas before? The texture is so delicate, and it instantly makes all the things you pile it high with all the better. We use duck fat in ours to add an extra layer of savory richness.
