  • About

Camarones a la diabla translates literally to “shrimp, the devil’s way.” It is a figure of speech referring to the fiery level of spiciness in the sweet and salty sauce the shrimp is flavored with. For our grilled variation, we put it on skewers.

Ingredients

  • 3 tablespoons grapeseed oil
  • 4 cloves garlic, peeled
  • ½ large

Method

Heat the grapeseed oil in a large cast-iron skillet over medium-low heat. When hot, add the garlic, onions, allspice, and the anchos, guajillos, and árbol chiles. Cook and stir until the onions are translucent and the chiles are aromatic, about 10 minutes. Stir in the tomato sauce, fish sauce, and ¼ cup
