Nopalitos are much more than an underrated green Mexican vegetable packed with fiber and vitamins; for some of us, those spiky dark green paddles reflect our identity. When cooked, nopales take on a surprisingly meaty texture. Think of these as the vegetarian version of Frijoles Puercos con Chorizo y Atún.
