Pickled red onions used to be reserved exclusively for cochinita pibil, but in Los Angeles people started offering them to top everything from birria (a traditional stew made from braised beef or goat) to cabeza (steamed beef or pork head tacos, which is popular across Mexico). With their lightly sweet and refreshingly spicy bite, it’s easy to see why. I like to always have some ready to eat because you never know when you’re going to crave them.
