Having simple syrup handy comes in clutch when batching cocktails. This recipe easily lends itself to be multiplied by two or more.
Put the sugar and water in a blender. Blend on high until the sugar is completely dissolved. Allow the mixture to settle for a few minutes to get rid of air bubbles. Store in a tightly sealed container in the refrigerator. Keeps for up to 6 weeks.
