Mexican gelatin desserts are overdue for a comeback. They are absolutely perfect as a last-minute dessert at a carne asada since they come together with just a handful of pantry ingredients. Gelatinas de mosáico also look absolutely stunning, making them a no-fuss way to celebrate a birthday or other special occasion. It is also a suprisingly light dessert after a heavy meal.
