Drinking chocolate in Oaxaca is never made with milk; it is made with water. When frozen into a paleta, it is like a chocolate sorbet. The naturally occurring cacao butter in Mexican chocolate makes the popsicles surprisingly creamy, despite the chocolate not having added emulsifiers and cacao butter that European chocolate has.

Method

In a large saucepan, bring 4 cups (1 L) water to a boil. Right before it boils, add the chopped chocolate tablets, sugar, and vanilla extract. Using a molinillo or whisk, mash the chocolate as best you can
