This quick Sichuan pickle is perfect served alongside grilled meat, roast pork or a stir-fry.

Prep 5 minutes


  • 3 baby cucumbers
  • 3 tsp finely chopped garlic
  • 1 tbsp caster sugar
  • 1 tbsp light soy sauce
  • 1 tbsp black vinegar
  • 1 tbsp roasted chilli flakes in oil


Using a small rolling pin, smack the cucumbers so they break into pieces. Alternatively, slice in half lengthways and then rip into pieces with your hands.

In a medium bowl, mix together the remaining ingredients and toss gently with the cucumbers. Serve within an hour or so of making.
