Nelleke Gorton thinks of baking for show competition as ‘naked’ cooking. By that the high profile New South Wales judge means the apparently simple, traditional recipes often involved leave cooks nowhere to hide when it comes to faults. ‘Even as an experienced baker, you have this challenge that everything has to be exact. There is no room for embellishments ... and you notice faults instantly. It is so difficult,’ she says.
