This is a versatile side dish as it is but you can easily bulk it out and turn it into a main following our suggestion below. Cook the bacon with the celeriac or separately. The former will give the veg a fantastic salty flavour but the latter will ensure a crispier bite to the bacon.

Ingredients

  • 1 medium celeriac (about 800 g), peeled, cut into chunks or wedges, and blanched

Method

Heat the oven to 180°C/Gas 4.

Put the celeriac and bacon into a roasting tin and coat with a generous glug of light olive oil. Season with salt and pepper but go easy on the salt as the bacon will add plenty of its own. Stir so that everything is well coated in oil.
