When I was growing up, our neighbor Mrs. Weinstein, a fabulous cook, used to make the best Passover sponge cake. With the holidays approaching, Susan in our pastry department made this simple cake to serve with berries or dried fruit compotes and it is a ringer for Mrs. Weinstein’s. Another happy taste memory brought back to the present. As she would say. ˝Enjoy˝
