Griff loves cinnamon swirl bread so much that he had to come up with his own recipe. The trick to getting a perfect cinnamon swirl in the center is to lightly mist the dough with water and then pat the cinnamon filling all over it before rolling it up like a jelly roll. This bread is great for toast.
In the bowl of a stand mixer fitted with the dough hook, combine the flour, sugar, spices, salt, and yeast. Turn the mixer on to low speed and add the eggs, butter, and milk, mixing well. Add the currants and walnuts, raise the speed to medium-low, and mix for 6 minutes, or until the dough is smooth.
