This is a delicious old-timey recipe inspired by our mentor, Jane Thompson. Jane used to own Mondo Bakery in Atlanta and she taught us how to run a bakery. Her spice cake was one of the first recipes she shared with us. It’s an applesauce cake, made with lots of spices, cocoa powder, and apricots and walnuts, and it is absolutely delicious.
