In a medium saucepan, melt the butter over medium heat. Add the brown sugar and whisk until the sugar has completely dissolved, about 3 minutes. Gradually add the cream, then continue whisking until smooth, 2 to 3 minutes. Transfer to the bowl of a stand mixer (or to a large bowl if using a handheld mixer) and let cool for 10 to 15 minutes, stirring occasionally.
