  • 1 cup heavy cream
  • 8 tablespoons (1 stick) unsalted butter, cut into 1-inch

Method

Combine the cream, butter, sugar, and salt in a heatproof bowl, set it over a saucepan of simmering water (do not let the bottom of the bowl touch the water), and stir occasionally until the butter is melted. Add the chocolate and stir until it is completely melted and the mixture is smooth.
