Lane Cake is mentioned several times in one of my all-time favorite novels, To Kill a Mockingbird; it even stirs up a rivalry between two of the neighborhood home bakers. This old-timey cake, which is also known as Prize Cake, was created by Emma Rylander Lane of Alabama, who won first prize with it at the county fair in Columbus, Georgia, at the turn of the twentieth century. It’s a moist white cake filled and frosted with a whiskey-laced custard, coconut, dried fruit, and pecans. T
