The snap of spice and the warmth of gingerbread always makes it the treat of choice for me on a cool fall day. When topped with a lemony frosting, these gingerbread cupcakes get a fresh burst of flavor. During the holidays, I like to deck these out with decorated mini sugar cookies made from scraps of dough for festive treats. For an added bonus, when you bake these, the aroma of ginger, cinnamon, and allspice will fill your kitchen with holiday cheer.
