At the peak of tomato season, we’re canning, roasting, or eating them as fast as we can. This is one of our favorite recipes to put sweet fresh tomatoes to use. If you don’t have the space or time to grow your own, use the highest-quality tomatoes you can find. We love heirloom tomatoes for their flavor and beautiful colors, which make this pie appealing to the eye as well as to your taste buds.
