Tybee Island, Georgia, is often referred to as Savannah’s beach, and it is one of Griff’s and my favorite weekend getaways. There is just something so rejuvenating about a quiet walk on a sandy beach. These light, delicate, and crumbly cookies have a sandy consistency, and they look a bit like sand dollars too.

Method

In the bowl of a stand mixer fitted with the paddle attachment (or In a large mixing bowl, using a handheld mixer), cream together the butter, granulated sugar, salt, and vanilla on medium-high speed for 3 to 5 minutes, until very light and fluffy.
